अयला
Aylā (Nepal Bhasa: अयला:) is a traditional Newari spirit distilled from fermented rice, millet, or grains. More than just a drink, it’s a cultural symbol—served during festivals, rituals, and family gatherings.
Prepared using Marcha (a natural fermenting agent), Aylā is fermented for several days, then distilled in clay and copper vessels over a wood fire. The result is a bold, aromatic spirit that reflects the rich heritage of the Newar community.
